Guests must retire to cabañas by 8:00 pm when the staff leave. Many guests surf or do activities early so we allow them plenty of time to rest. Maintaining the natural rhythms of the sun promotes wellbeing and health.
Nicaragua Thai Fusion Explained
Authentic Nicaraguan food dishes elevated with modern culinary technique using quality ingredients. Our restaurant fuses Nicaraguan and Thai food favorites. Santosha presents a modern twist to holistic style cuisine on roadside specialties from Nicaragua and Thailand like Satay, Vegan Pad Thai, Papaya Salad, Curries, Vigoron, Albondiga Soup, Gallo Pinto with Coconut Rice, Ceviche, and a few of our own creations such as the Vegan Santosha Ravioli, Thai Gazpacho Soup, Coconut Macaroons, Coconut Tortillas, and Coconut French Toast. We also serve Modern Seafood and Meat dishes with Thai ingredients.
We serve an inventive cocktail menu in a casual poolside atmosphere that lures groups who want to celebrate a special occasion and also experience the casual experience of Nicaragua without the exhaust fumes and plastic chairs.
Kitchen led by Executive Chef Heidi Parker, certified Nutritionist, and creator of the Thai Fusion Holistic Cuisine Concept at Santosha. She has emerged from a firm grounding in both traditional Thai cuisines, and modern culinary techniques. She studied Thai Culinary & Thai Massage abroad in Thailand. Her focus is on reinterpreting the assertive and multi-layered flavors of classic Thai dishes with modern techniques and unexpected ingredient combinations that are also clean, whole and healthy. She focuses on growing the ingredients in the garden and teaching the Nicaraguan staff how to use these ingredients which are native to Nicaragua but they have never used them in such a bold way. Many of the combinations create a medicinal effect. Food is medicine and can alleviate inflammation within the body. Santosha also has it’s own boat that brings in the catch of the day! All of the seafood featured on the menu is the freshest you can find.
Design, A facade of bamboo and concrete evoke traditional Indonesian & Nicaraguan style construction, while the contemporary interior features an open layout with bamboo, steel, and concrete surfaces and concrete floors. A central open void terrace separates two themed spaces – the open kitchen with 20-seat dining – and opposite – the bar and a pool bar all over looking the ocean can accommodate up to 30 guests.
Design elements are evident throughout the interiors – referencing quintessential elements of Buddha, bamboo, “Nica” and “Thainess” similarities such as tropical lush gardens, ocean views and smiling friendly faces.
Signature cocktails at the bar blend Nicaraguan spirits with Thai culinary ingredients to create flavorful and refreshing drinks. Playful presentation, quirky names and distinctly “Thai” taste combinations are featured in cocktails such as our Thai Mojito with sweet Thai Basil and our refreshing Lemon Grass Iced Tea.
